Animal fats and oils are lipids (triacylglycerols) that come from animals, usually as by-products of meat, milk, or wool production. They are not raised specifically for their fats and they do not grow in the same way as oilseeds grown for vegetable oil. Like oils, they are a mixture of saturated and unsaturated fats. These fats and oils are composed of triglycerides, which are made up of three fatty acid molecules attached to a glycerol molecule.
